This Rkatsiteli is from an organically certified vineyard in Tskharoastavi village, 650 meters above sea level. Grapes are handpicked in September at 23% sugar content.
After, the grapes are destemmed, gently crushed and fermented in traditional qvevri at a controlled temperature of 25 to 28∘C. During primary fermentation, grape skins are manually stirred every three hours. After fermentation, qvevri are sealed.
In early March, the wine is separated from the skins, followed by three rackings: the first two weeks later, the second about a month after the first, and the final in June or July.
Aromas - dry white fruit and raisins, with a hint of moonshine on the finish. Tastes - dry white fruit and raisins.
Founded in 2014, "Iora" winery is located in Kakheti, Georgia, at 700m. Their 2.5-hectare organic vineyard, certified since 2019, grows Saperavi, Rkatsiteli, Kakhuri Mtsvane, Kisi, and Buera grapes. "Iora" produces bio-certified Qvevri wines using traditional Georgian methods, exclusively from their own harvest. These wines have gained recognition at international natural wine festivals like RawWine and Orange Wine in cities including Vienna, Paris, and Tokyo. The unique quality of their wines stems from the local terroir, organic practices, and the Iori River valley's influence.
