This Kisi and Rkatsiteli wine is crafted from traditional Kakhetian grape varieties cultivated in the organically certified vineyards of Marani Iora, Sagarejo Municipality. The grapes are harvested in the second half of September at their peak technical ripeness, with a sugar content of 22-23%, using special crates to maintain quality.
A distinctive practice involves combining Kisi (30%) and Rkatsiteli (70%) before destemming, a ratio refined over years to produce an exceptionally balanced and aromatic wine. After destemming, the crushed grapes ferment in traditional qvevri, remaining with 30% skin contact over 6 months.
In early March, the wine is separated from the skins and returned to the qvevri for further maturation. It undergoes three rackings: at the end of March, in May, and in August.

Founded in 2014, "Iora" winery is located in Kakheti, Georgia, at 700m. Their 2.5-hectare organic vineyard, certified since 2019, grows Saperavi, Rkatsiteli, Kakhuri Mtsvane, Kisi, and Buera grapes. "Iora" produces bio-certified Qvevri wines using traditional Georgian methods, exclusively from their own harvest. These wines have gained recognition at international natural wine festivals like RawWine and Orange Wine in cities including Vienna, Paris, and Tokyo. The unique quality of their wines stems from the local terroir, organic practices, and the Iori River valley's influence.
